I know, I know. It's a little ironic that my last post talked about getting fit and being healthy. But its not a crime to indulge once in awhile. If you like a moist, soft, and filling cookie, this cookie is made for you! I have been searching for soft cookie recipe for ages. I love biting into a moist and chocolatey cookie. I also take the cookies out of the oven a minute or two early hoping that it would leave it soft after it's cooled. But it's always failed me. And I haven't found a recipe until I discovered this one. And you don't have to worry about not being able to stop eating after just one cookie because they're super filling! I have been notorious to eat up to 5 cookies in a day. But with this batch, I find myself content with having one and MAYBE two if I'm starving. Without further ado, here is the recipe...
Chocolate Chip Cookies
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup coconut oil
- 1 cup brown sugar
- 1/4 cup milk of choice
- 1 tbsp vanilla extract
- 1/2 cup chocolate chips
Directions:
Preheat oven to 350 F. In a small bowl, cream coconut oil and brown sugar together. Mix in milk and vanilla extract. In a separate bowl, mix flour, baking powder, baking soda and salt together. Mix very well. Stir in the 'wet' ingredients. Add in the chocolate chips. The mixture gets crumbly. You can use your hands to incorporate all the ingredients together. Now, roll dough into balls and put it on a baking sheet. Bake for 7-10 minutes. (Or take out when golden brown). Let cool and devour!!
Notes:
For the flour, I used half spelt and half whole wheat flour.

I also substituted coconut sugar for the brown sugar.
I used unsweetened vanilla almond milk
I used Trader Joe's semi sweet chocolate chips.
Feel free to add a splash of milk to get more of a formed dough. But don't add too much.
I take my cookies out after 7 minutes to leave it soft and moist for a good couple days!
